Hi Everyone,
Firstly, if you haven't noticed we have had a name change!. We are now an Official fanclub for Mindy after speaking to Mindy she gave me the go ahead to make the Unofficial fanclub into an Official fanclub. Managed by Me, Roz, which is an absolute pleasure. Ive gotten to know Mindy throughout our chats and she is a lovely, wonderful caring and genuine person and a sweetheart to boot and what you seen on Television is what you get with Mindy.
So, i hope you all like the chance and i look foward to giving you more information in what Mindy is doing and please check out our facebook fanclub page and Mindy's Masterchef facebook page and "like" both to show your support for Mindy.

Masterchef TV series. WOFF Woods said a family posting to RAAF Base Butterworth in Malaysia in the early 1990s particulary influenced daughter Mindy s love of Asian cuisine. Living in Butterworth made us aware of the fantastic food available in Malaysia in Thailand and we fell in love with it, WOFF Woods said. My wife and I taught all three of our children at a young age to cook various types of food, with Asian our favourite. Mindy, a physiotherapist from Queensland, made it into the top four during the finals of the popular TV show. WOFF Woods was invited onto the show in the lead up to the final week. FROM making the perfect pasta to shucking oysters, this weekend some of Australia's best chefs will be at Moore Park to show you how it's done.
MasterChef Live kicks off this Friday in what is shaping up as a food lover's paradise.
In its third year, the event comes on the back of a year when interest in food, cooking and restaurants is booming.
Three Blue Ducks chefs Darren Robertson and Shannon Debreceny and Buzo's Mitch Orr are some of the chefs who will be on hand to share their skills.
2012 MasterChef contestant Mindy Will also host several segments.
She said the public's growing interest in food was because of an increased awareness of organic and sustainable eating.
"It's getting back to grass roots of what food is about. It's not only enriching for our bodies but for our soul," she said.
"Food is one of these things which unites everyone in the world.
"People are being so creative about food; they don't just want to eat processed products."
Robertson, Debreceny and Orr agreed.
"It's about not doing too much with what you have," Debreceny said.
The trio agreed it was a large reason why eastern suburbs residents were so loyal to their restaurants.
"You've got to stick to what you're doing and do it well, otherwise you'll scare away your audience," Robertson said.

Mindy's Pizza bianca with prosciutto, rocket & mozzarella
PIZZA BIANCA WITH PROSCIUTTO, ROCKET & MOZZARELLA
* Allow an extra 45 minutes to prove pizza dough.
* Makes: 2 x 30cm PIZZAS
* Preparation: 25 mins
* cooking: 10 mins
1 sprig rosemary, leaves picked
2tbs extra virgin olive oil
6 slices prosciutto,
torn into strips
250g Fresh buffalo mozzarella*
torn
1/2 cup baby rocket
1tbs balsamic vinegar
PIZZA DOUGH
7g sachet instant dried yeast
1 tsp caster sugar
300g (2 cups) plain flour
2 tbs extra virgin olive oil
semolina to scatter
1: To make pizza dough, combine yeast, sugar, a pinch of salt and 180ml (3/4 cup)
warm water in a small jug. leave for 10 minutes or until frothy. place flour in large bowl and make a well in the centre. add yeast mixture and oil. stir with wooden spoon to combine. Using your hands, form into a soft dough.
2: Turn out dough onto a lightly floured surface and knead for 5 minutes or until smooth and elastic. Place in a lightly oiled bowl, cover with plastic wrap and leave in a warm place to prove for 45 minutes or until doubled in size.
3: Meanwhile, combine rosemary and oil in a small morter and bruise leaves with pestle. transfer to a small bowl.
4: Place 2 heavy-based oven trays or pizza stones in oven and preheat to 230C, using fists, knock down the dough and divide into 2. On a lightly floured surface roll out each portion to a 30cm round.
5: Remove hot trays from oven, scatter with samolina and slide pizza bases on top. Spoon rosemary oil over each and bake, swapping position of trays halfway through, for 10 minutes or until golden.
6: Top baked bases with prosciutto, mozzarella and rocket. Dizzle with balsamic vinegar to serve.
TIPS:
* Buffalo mozzarella is available from selected supermarkets and delis. Substitute bocconcini or cows milk mozzarella.

Mindy and Julia's Roman Seafood Stew
Serves: 4
Ingredients
- 2kg ripe tomatoes
- Extra virgin olive oil
- 1 red onion, diced
- 3 garlic cloves, finely chopped
- 8 whole red mullet (100g each), cleaned
- 8 scampi
- 16 scampettini (baby scampi)
- 20 mussels
- 30 clams
- 1 loaf pugliese bread (crusty Italian loaf), sliced
- 1 garlic clove, halved
- 2 lemons, rind finely grated
- 250ml-300ml white wine
Parsley and garlic oil
- 2 bunchesflat-leaf parsley
- 2-3 garlic cloves
- 200ml olive oil
Method: Preparation: 25 minutes
Cooking: 50 minutes
1. Cut a cross in base of each tomato then place in a large pan, cover with boiling water and stand 3 minutes. Drain tomatoes. Peel, quarter and deseed tomatoes, roughly chop.
2. Cover base of a large saucepan with oil, add the onion and garlic and sauté for 5-7 minutes until soft. Add tomatoes and 2 whole mullet and simmer gently for 10 minutes until tender.
3. Fillet and pin-bone the remaining mullet. Prepare the scampi and scampettini by shelling the mid- section, leaving the heads and tails intact. Reserve some of the front claws for presentation. De-beard and scrub mussels and purge the clams.
4. Add the scampi and scampettini shells to the tomato sauce, simmer 5 minutes, adding a little water if necessary.
5. For the parsley and garlic oil; remove the leaves from the parsley and blanch in boiling water for 30 seconds. Drain and pat dry. Blanch the garlic in boiling water for 1 minute, drain and pat dry. Combine parsley, 2 of the garlic cloves and oil in a blender and blend until smooth. Pass through a fine sieve. Taste oil and adjust seasoning, adding more garlic if needed.
6. Rub both sides bread with oil and char-grill. While hot rub with cut side of garlic and sprinkle with lemon rind.
7. In a deep frying pan with a lid, heat 2 tablespoons olive oil and the mussels, pour in the wine and toss quickly. Cover and cook 1 minute until shells begin to open, add the clams add the scampi claws. Cover and cook 1-2 minutes, remove from the heat. Strain the cooking liquid into the tomato mixture, set the seafood aside. Remove the mullet and shells from the tomato sauce, season.
8. Heat oil in a large frying pan, pan fry the scampi, scampettini and mullet fillets. Toss the tomato sauce through the mussels and claws and ladle into bowls. Top with scampi, scampettini and mullet. Spoon over parsley and garlic oil and serve with bread.
Tip: always use the freshest and best seafood possible and super- ripe tomatoes. :)
