Mindy Woods draws inspiration from RAAF Chef

WOFF Woods said a family posting to RAAF Base Butterworth in Malaysia in the early 1990s particulary influenced daughter Mindy s love of Asian cuisine.

Living in Butterworth made us aware of the fantastic food available in Malaysia in Thailand and we fell in love with it, WOFF Woods said.

My wife and I taught all three of our children at a young age to cook various types of food, with Asian our favourite.

Mindy, a physiotherapist from Queensland, made it into the top four during the finals of the popular TV show.

WOFF Woods was invited onto the show in the lead up to the final week.

When Mindy was given the dish of the day and put into the top
six, I was the proudest Dad. My wife Brenda, who was in the background, was the proudest Mum as well, he said.

When the program began, WOFF Woods was deployed at Al Minhad Air Base in the United Arab Emirates.

Now I guess it s our turn to get cooking lessons from Mindy. We ve already received some great tips and recipes from her since she s been on Masterchef, and we can t wait to see where her culinary skills take her.

Mindy plans to gain experience on the Sydney restaurant scene before returning to Brisbane to open an Asian-style wine bar.

Masterchef LIVE wentworth Courier Article with Mindy

FROM making the perfect pasta to shucking oysters, this weekend some of Australia's best chefs will be at Moore Park to show you how it's done.
MasterChef Live kicks off this Friday in what is shaping up as a food lover's paradise.
In its third year, the event comes on the back of a year when interest in food, cooking and restaurants is booming.
Three Blue Ducks chefs Darren Robertson and Shannon Debreceny and Buzo's Mitch Orr are some of the chefs who will be on hand to share their skills.
2012 MasterChef contestant Mindy Will  also host several segments.

She said the public's growing interest in food was because of an increased awareness of organic and sustainable eating.
"It's getting back to grass roots of what food is about. It's not only enriching for our bodies but for our soul," she said.
"Food is one of these things which unites everyone in the world.
"People are being so creative about food; they don't just want to eat processed products."
Robertson, Debreceny and Orr agreed.
"It's about not doing too much with what you have," Debreceny said.
The trio agreed it was a large reason why eastern suburbs residents were so loyal to their restaurants.
"You've got to stick to what you're doing and do it well, otherwise you'll scare away your audience," Robertson said.

Mindy's Pizza bianca with prosciutto, rocket & mozzarella

PIZZA BIANCA WITH PROSCIUTTO, ROCKET & MOZZARELLA

* Allow an extra 45 minutes to prove pizza dough.

* Makes: 2 x 30cm PIZZAS
* Preparation: 25 mins
* cooking: 10 mins


1 sprig rosemary, leaves picked
2tbs extra virgin olive oil
6 slices prosciutto,
   torn into strips

250g Fresh buffalo mozzarella*

               torn
1/2 cup  baby rocket
1tbs balsamic vinegar

PIZZA DOUGH
7g  sachet instant dried yeast
1 tsp caster sugar
300g (2 cups) plain flour
2 tbs extra virgin olive oil

semolina to scatter

1: To make pizza dough, combine yeast, sugar, a pinch of salt and 180ml (3/4 cup)

warm water in a small jug. leave for 10 minutes or until frothy. place flour in large bowl and make a well in the centre. add yeast mixture and oil. stir with wooden spoon to combine. Using your hands, form into a soft dough.
2: Turn out dough onto a lightly floured surface and knead for 5 minutes or until smooth and elastic. Place in a lightly oiled bowl, cover with plastic wrap and leave in a warm place to prove for 45 minutes or until doubled in size.

3: Meanwhile, combine rosemary and oil in a small morter and bruise leaves with pestle. transfer to a small bowl.

4: Place 2 heavy-based oven trays or pizza stones in oven and preheat to 230C, using fists, knock down the dough and divide into 2. On a lightly floured surface roll out each portion to a 30cm round.

5: Remove hot trays from oven, scatter with samolina and slide pizza bases on top. Spoon rosemary oil over each and bake, swapping position of trays halfway through, for 10 minutes or until golden.
6: Top baked bases with prosciutto, mozzarella and rocket. Dizzle with balsamic vinegar to serve.




TIPS:
* Buffalo mozzarella is available from selected supermarkets and delis. Substitute bocconcini or cows milk mozzarella.
